Excellent refreshing drink –hot chocolate and vanilla make a wonderful combination

Ingredients
Milk 4 cups
Vanilla pod 1
Cinnamon 1 inch stick
Sugar 2 tablespoons
Cocoa powder 4 teaspoons
Dark chocolate, grated 1 cup
Vanilla essence 2-3 drops
Method
Heat two cups of milk in a deep pan. Add vanilla pod and cinnamon stick and bring it to a boil. Lower the heat and let it simmer, stirring continuously, till it reduces slightly. Pour the remaining milk into the Frothie machine. Add one tablespoon sugar, two teaspoons of cocoa powder, half the dark chocolate and vanilla essence. Switch it on. Add the remaining sugar to the pan along with remaining cocoa powder and stir. Add the remaining dark chocolate and mix. Line a strainer with muslin cloth and strain the milk into the serving cups. Pour the milk from the Frothie machine into some more serving cups. Serve hot.

* 6 bread slices
* 2 eggs
* 3 cups milk
* 50 gms butter
* 50 gms dried fruit (sultanas, raisins, etc.)
* ¼ nutmeg, powdered
* 1/3 cup castor sugar (superfine sugar)
* 1 tsp vanilla essence (extract)
Steps
1. Apply butter to a rectangular baking dish.
2. Remove the crusts from the bread and cut each to 4 pieces.
3. Apply measured butter liberally to one side of the slice only.
4. Arrange one layer of bread pieces in the baking dish buttered side down and place the pieces slightly overlapping each other.
5. Sprinkle the dried fruit and half of the sugar on top.
6. Arrange the rest of the slices buttered side upwards.
7. Mix the nutmeg with the rest of the sugar and sprinkle on top of the slices.
8. Beat eggs, mix with milk and essence (extract). Strain this mixture over the arranged bread slices. Allow to soak for 30 minutes.
9. Bake in a preheated oven (at maximum temperature) until top turns golden brown.
10. Serve warm with custard or fresh cream.
